What Are the Qualities of Fine Chocolate?

A customer in Ottawa recently asked us this question.
There are many differences between what is often called 'supermarket' chocolate, and fine chocolate. Of course, price is one of the obvious ones (the old saying that 'you get what you pay for' has never been more true!). At Appleton Gift Basket Co., it is important to us to offer a selection of fine chocolates, from around the world as well as from Canadian chocolatiers. | 'Supermarket' Chocolate: |
- high sugar content
- often contains partially hydrogenated palm oil and vegetable oil
- may contain dried milk
- use of artificial flavours and preservatives
- as little as 20% cocoa content from inferior cocoa beans
- gritty texture
- often has wax blended in, resulting in waxy taste

- contains real cocoa butter, much higher cocoa content
- contains real vanilla
- no preserving agents
- freshest dairy products used
- sugar used sparingly
- true cocoa taste that lingers much longer

I spent many years living in Europe, and for me as a true chocoholic, one of the best advantages was the availability of fine chocolate, since countries such as Switzerland and Belgium are renowned for their chocolatiers!
